The season of this thorny yet sweet and juicy fruit is here. Instead of consuming it directly, I thought of caramelizing it and adding some mint and lime. It indeed enhanced it's natural strong flavours, and apparently it became even more sweeter. Here is instant pineapple salad recipe,
You'll need:
- 1 Pineapple (peeled, deseed and chopped in cubes)
- 6 teaspoon of brown sugar
- 15-20 mint leaves
- 1 teaspoon lime juice
- 4 teaspoon of honey.
Method:
- Caramelize Pineapple cubes by placing it on a hot tawa for 1-2 minutes. (Keep an eye that it does not burn and only grill marks are formed)
- Grind mint and brown sugar together, until you get moist green mixture that is well combined.
- Sprinkle this mixture over caramelized pineapple followed by lime juice and toss it few times.
- Pour honey to glaze it up and make it even more sweeter.
- Your caramelized pineapple salad is ready.
